TOMATO UPAMA

Ingredients
 Ghee 4 tablespoons
 semolina 1 cup
 mustard 1 teaspoon
 Cumin seeds 1teaspoon
 Curry leaves 1 sprig(s)
 Ginger chopped 1 teaspoon(s)
 Green chilly 2 slit / chopped
 Onion 2 sliced finely
 Tomato1 large chopped,
 Coriander leaves 4 tablespoons
 Grated coconut if available 2 tablespoon(s)
 Hot water 2 cup(s)
 Salt to taste
 Fried cashew nuts to garnish
Method
 Heat half amount of the ghee in a pan. Cook semolina, stirring incessantly, to a golden color on medium fire for about 2 minutes. Keep aside.
 Heat the left over ghee in a pan. Put in the mustard seeds and then by the cumin seeds and fry them till they seeds seethe fully. Put the ginger, curry leaves, onions and green chilies. Stir fry on average flame for about 3 min or till the onions are translucent and soft.
 Add the chopped up tomatoes and fry on medium flame for about 3 mins or till they are cooked. Add some of the coriander leaves and fry briefly till they droop.
 Mix in the salt and semolina. Add the warm water to this and mix well. Add further hot water if the mix is dry. Cover and heat on low heat for about 3 min or till the mix is almost dry.
Decorate with fried cashew nuts, finely chopped coriander leaves grated and coconut .
