ALUU POLAO


Ingredients
1.1 cup --Samwat Rice (also known as Parsai ke chaawal)
2.2 tbsp. Ghee
3.1 tsp. Cumin Seeds
4.2 Cloves
5.A tiny piece of Cinnamon
6.2 green Cardamoms
7.1 large Potato (diced in small pieces)
8.2 tsp. Rock Salt
9.1/2 tsp. Red Chili     Powder
10.3 cup Water
11.Green Coriander to garnish
Method


1.Heat ghee in a pan
2.Add cumin seeds, cloves, cardamom and cinnamon to the oil
3.When they give off fragrance, add potato and rice
Stir-fry to a light brown color
4.Add rock salt, chilli powder and water
Cover the pan and let it simmer on low flame for about 15 minutes.
5.Garnish with green coriander
6.Serve hot, with cold curd.
