CHOLEY -BHATUREY



Bhature

Ingridients:-
1.All purpose flour (Maida) --2 cups
2. Yeast---1 pouch
3.Yogurt--1 cup
4.Vegetable Oil --2tbsp
5.Salt --to taste

Choley :-
Ingridients
1.Garbanzo beans-1 small can
2.Ginger paste --1/2 tsp

3.Garlic powder--1/2 tsp
4.Cumin seeds--1tsp
5. Oil---2 tbsp
6.Cilantro--2 tbsp
7. Mint leaves--6-7
8.Turmeric Powder--1/2 tsp
9.Chilly Powder--1/2tsp
10.Bay Leaves --2-3
11.Cloves--2-3
12.1/2 tsp Garam Masala--1/2tsp
13.Finely chopped onion--1 medium sized
14Tomato-- 1 1/2 cup
15.Water
16.Salt-- to taste
Method

Bhature
1.Take yeast and soak in lukewarm water for 5-10 minutes.
2.Take all other ingredients and mix well.

3. To this add the yeast and make a soft dough like for chappatis.
4. If need be add a little water and keep aside for 4-5 hours, the longer kept, the better it is.


5.Roll like puri but this needs to be kept thicker than poori.
6. Fry like poori till both sides are golden brown.
Chole
1.Take 2 tablespoons of oil in a pressue cooker and heat it.
2.Add garlic powder and make it dark brown.

3. Then add cumin seeds fry till they start spluttering.
4.Now add bay leaves and cloves.

5. Add diced onions. Fry then till they are light brown.
6.Now add the rest of ingredients including water except the cilantro and mint leaves.
7.Close the pressure cooker and wait for 3 whistles to come or cook for 5-7 minutes.
8.Garnish choley with thinly sliced long pieces of onion and a piece of lemon split up into 4 pieces.
